Eggs Humility
INGREDIENTS:
8 eggs
3 slices Asiago bread, cubed
1 green pepper, cubed
8 slices of Canadian bacon, in strips
Scallions diced to your liking -
1/2 cup shredded mozzarella cheese + sharp cheddar
6 mushrooms, sliced
2-3 Tbsp Parmesan cheese
1/2 cup cream salt to taste
INSTRUCTIONS:
Placed cubed or torn bread in bottom of casserole dish. Add green pepper,
scallions, Canadian bacon, mushrooms on top. Lightly which eggs with cream,
pour over top. Add mozzarella and cheddar cheese on top. Sprinkle Parmesan
cheese on top.
Place in 350˚ F oven for 30-40 minutes, until the top starts to
brown slightly, or to your preference.
Remove from oven and let rest for 5-10 minutes. Serve and enjoy!

I learned this recipe from my mentor and dear friend Richard Seaboldt. This was
a favorite recipe of his, so noted for its versatility. He may have coined the name
“eggs humility,” as it is a humble dish that is easy to make. Eggs are the only
essential ingredient - add whatever you have in the fridge at the time.
