This is one of my Favorite Treats- and one of the Best things I’ve EVER Eaten… They are Magical… and Grace shares her favorite tips that makes them even more incredible… A MUST FIX (and MUST EAT TOO!!!!!)

INGREDIENTS:
325g or 1-1/3 cup milk
6-7 large eggs (depends on egg size)
15g or 3 tsp salt
175g or 1-1/2 cups shredded cheese
175g or 13 Tbsp unsalted butter
25g or 1/4 cup grated Parmesan cheese
300g or 2-1/2 cups all purpose flour
INSTRUCTIONS:
In a saucepan, combine milk, salt, and butter. Slowly bring to a boil and simmer
over medium heat. Add flour & whisk to combine. Cook over medium heat until
dough thickens, using a wooden spoon for another minute. Transfer dough to a
stand mixer. Using a paddle, mix on medium speed for about a minute to cool
the dough. Add eggs 1 at a time, allowing each to incorporate before adding
the next. Dough should be wet and pasty. Mix in grated cheese and Parmesan.
Wet hands to form heaping tablespoons of the dough into balls. Place on a
parchment-lined cookie sheet. Bake in a preheated 390°F oven for 7 minutes.
Spin tray and bake 8-9 more minutes, until puffed up and golden. After baking,
open the oven door, heat off, to let the puffs cool a bit. Enjoy warm.
